There’s a lot of things about wedding planning that you have no idea about – until you get engaged. 

After searching online for venues, vendors and researching prices it’s clear that wedding planning is difficult. First, you have to decide on the day, and that’s all fine and dandy until you find out no one, and no venue, is actually available for that date. It also doesn’t help when you have a popular date in mind. So, as of now we haven’t finalized anything after almost a month of being engaged (this Thursday.) 

Actually, I have to laugh because as soon as you’re engaged the first thing people ask is “have you set a date!?” I’m sure I’ve been guilty of this before when my friends or family have gotten engaged. We called family and friends within an hour of Adam popping the question and more than once we were asked “So, have you got a date?” We were both like “no, it just happened half an hour ago!” should we have this figured out that soon?? Even a month later, we’re no closer to figuring out a set date or venue location. 

One thing we have decided is that it won’t be this year – with our date in mind it would have been much too quick to get everything done this year (although I’m sure it could be done, I’d rather enjoy our engagement than stress over rushing through preparations.) We have a few appointments to look at venues for a 2015 wedding, which will give us lots of time to prepare, plan, and most importantly, enjoy our engagement. 

A couple weekends ago I attended my first ever Wedding Fair.  I thought it would be totally overwhelming, but it was actually really enjoyable. I now have hundreds of brochures and bridal magazines to peruse. 

Just before meeting with a friend to chat about our engagement over coffee one afternoon, I popped into London Drugs and found this puffed quinoa cereal. I hadn’t seen quinoa cereal before and instead of thinking about it as a breakfast food, I immediately thought about turning them into squares. Rice Crispy Squares are one of Adam’s favourite things, and I guess he is my fiancé now, so I thought I’d make him a treat since I couldn’t remember the last time I actually made them. 

I also bought Trader Joe’s Crisp Rice Cereal, which I found was way crispier than regular rice krispies – which makes for an even better square.

I made these without butter (sub coconut oil), and you can make your own marshmallows (recipe here!) or use store bought. The cocoa quinoa reminded me of my favourite tri-colour qunioa, yum!

Cocoa Quinoa Rice Crispy Squares
Yields 24
Crisp quinoa and rice squares made with gooey marshmallows. Wheat Free - Gluten Free - Dairy Free

Ingredients
  1. Marshmallows (half a pan of homemade, or 1 bag of store bought)
  2. 3 cups Cocoa Quinoa Cereal
  3. 3 cups Crisp Rice Cereal
  4. 2 Tbs. Coconut Oil
Instructions
  1. 1. In large pot melt coconut oil along with marshmallows over medium-low heat until completely melted, stirring often with wooden spoon.
  2. 2. Prepare a 9x13 baking dish, or 2 8x8 baking dishes with parchment paper, or spray with coconut oil/cooking spray.
  3. 3. When marshmallows are completely melted, turn off heat. Pour in the Quinoa and Rice cereal and stir together until well incorporated.
  4. 4. Pour mixture into prepared pan and, using a large metal spoon sprayed with cooking spray, push down and smooth out using the backside of the spoon.
  5. 5. Set aside and cool completely. Cut with knife into squares, store in ziplock bag or container on the counter for up to a week.

Back at it with a new Meatless Monday recipe!

This is the month where everyone is trying to ‘detox’ and eat healthier after a slew of overindulgent holiday get togethers – myself included. 

I truly enjoyed the holidays, and everything that came with them. The sleeping in, the late breakfasts, appetizers and many desserts. But now it’s time to start feeling better and more energetic despite the early dark evenings and dark dreary mornings. 

To get more energy load up on veggies and fruits to keep your body going. I wanted to create some more interesting salads for lunches, including making my own dressings. I experimented last week with a few salad dressings and they were all delicious. The first was this avocado dressings – easy, garlicky and delicious. 

I love a cool green salad topped with warm winter squash. I cooked some butternut squash for soup, and saved some to mix it into my salad. Don’t let the pretty photos fool you – as soon as I was done photographing this dish I threw the plateful of salad into a larger bowl, added more squash and dressing and mixed it into a big delicious amazing mess. Salads are best messy drenched in creamy avocado dressing. 

Salad dressings are so easy to make, and taste better than the bottled stuff. Here I grabbed avocado, oil, lemon and garlic. I piped it overtop using a plastic piping bag, but you can go ahead and spoon it overtop.

Green Goodness Salad

Ingredients

  • Kale, washed, dried, chopped and stem removed
  • Cabbage, chopped
  • Shredded brussel sprouts
  • Zucchini, sliced
  • Butternut squash, roasted

For the Dressing:

  • 1 ripe avocado
  • 1-2 Tbs. olive oil
  • 1 clove of garlic
  • 2-3 Tbs. Lemon Juice

Directions:

1. To roast the butternut squash, peel and cut it into ‘steaks’ – semi-circles, and season with olive oil and pepper. Roast at about 375* for 45 minutes turning over halfway through. Set aside. 

2. To make the dressing place all ingredients into a food processor and mix until completely combined. 

3. Chop, slice, and mix together greens. Top with roasted butternut squash. Drizzle with salad dressing.

14 things for 2014

this week

  1. Planning our wedding (p.s. we got engaged!! post here) – I’ve only bought one wedding book, because well, I couldn’t resist. I’m trying to not go overboard – yet.  Pinterest is a wedding planning bonanza. We’ve also looked at a few venues which is super exciting.
  2. Engagement Party – Our parents are holding an engagement party with close family and friends at the end of the month. It’s the first official celebration and real beginning of our wedding adventure! I am so looking forward to it.
  3. Adam’s 30th Birthday – Adam’s big 3-0 is at the beginning of March. I’m looking forward to planning a big bash for him to enjoy.
  4. Learning more about photography – I was super excited to receive a Tripod for Christmas, and I really want to learn more about my cameras possibilities and how to properly use the settings.
  5. Organization – We’ve lived in the house a year, and boy have we filled it up! 2014 will be the year of organizing, getting rid of excess and sanity 😉
  6. Blogging – In December I officially began writing as a freelance writer for VancityBuzz – a local Vancouver blog – as a recipe developer. I am so looking forward to continuing to share my recipes and food photography.
  7. Spending time with friends – I love hosting get togethers and dinners with friends.  I bought Adam some games for Christmas so I’m hoping some game nights are in the future. 
  8. Planning a trip away – last year we went to Vegas for a weekend, but I’m hoping maybe this year we can plan a little getaway too. 
  9. Routines – I’m hoping we can get back into a good all around routine – eating healthy, being active, work and life balance. 
  10. Trying out new recipes – 2013 brought about lots of changes in diet due to food allergies. I also tried out vegan recipes. I would love to continue to explore and experiment with new recipes for the blog!
  11. Read more books – I bought a handful of novels towards the end of 2013 and I’ve read only a couple. I would love to set aside more time for reading – less for technology. 
  12. Turning 26 – I thought turning 25 would be crazy, but I am excited for what 26 brings!
  13. Spending more time with Family – Spending time over the holidays with both our families was great, I love being with family – especially at your parents because you feel like a kid again. I love family dinners, and spending time with our adorable little niece.
  14. Being adventurous – who knows what 2014 will hold, but I’m ready to explore all that it’s got!
