Friday was the official first day of summer! I shared a smoothie recipe, and a list of things to do this summer – including camping. This upcoming weekend is the long weekend in Canada to celebrate Canada day. Adam and I are going to meet a few friends of ours on the island for some camping! I haven’t really ‘camped’ in a long time. When we go down to his family vacation place in the states, its sort of like ‘glamping.’ It’s a gated community, and there’s a large trailer, shower, running water, not exactly ‘roughing it’ haha, which I don’t mind. But, I do love regular camping too. I’m definitely looking forward to being outdoors, boating, possibly fishing, and ATVing.

This past weekend was spent at the ball field. I had a tournament all weekend, which we won 3/5 games, but unfortunately were knocked out after our second game on Sunday. It was super muggy all weekend too. Even though it was cloudy I got burnt on my arms. Thankfully we got to wear our shorts for the first time this year, goodbye tight white baseball pants, hello horrible tan lines (high baseball socks + sliders + shorts.)

Last week I didn’t have a Meatless Monday update because it was a hectic weekend/week! But I’m back, with a deliciously meatless dinner idea.

I was contacted a little while ago from Steam Whistle Beer asking If I wanted to try their product. While I don’t really drink beer, Adam does. And, I was intrigued when they said they had a large amount of recipes on their website made with beer including appetizers, entrees and desserts. I was excited to see a pizza crust recipe with only three ingredients, and zero time for rising.

I made two versions, a margherita style pizza with fresh basil from my plant, roasted tomatoes and goat cheese, and another fully loaded veggie pizza with mushrooms, onions, peppers and tomatoes. Both were absolutely delicious and the thin crust was perfect. Unfortunately with my wheat allergy I think the small amount of whole wheat in the dough combined with the beer itself upset my stomach, but I think it was worth it.

Thin Crust Beer Pizza Dough

Makes 3, 10″ pizza, or one large pizza.

Ingredients

  • 2 cups rice flour
  • 1 cup flour (whole wheat/all purpose) + More for dusting/adding to dough
  • 2 Tbsp. Baking Powder
  • 12 oz. Steam Whistler Beer (can sub other light beer)

In stand mixer add flours and baking powder. Stir together to incorporate. Using paddle attachment, add beer and mix gently. Switch to dough hook, and add about 1/2 cup more flour, more or less depending on how ‘sticky’ the dough is. You want it to be soft and elastic.

Once it forms a ball, remove from mixer onto slightly floured countertop. Knead 5-10 times to finish the dough.

Use a rolling pin to roll out dough into round 10” circle. Place onto pizza pan and brush top of dough with olive oil, and top with your favourite pizza sauce.

When ready to bake, heat oven to 500 degrees F.

Toppings:

I made a margherita pizza with tomato sauce, slow roasted tomatoes, fresh basil, and topped with crumbled goat cheese.

I also made  a veggie pizza with mushrooms, thinly sliced bell peppers, red pepper, roasted tomatoes, and crumbled goat cheese.

Assemble pizza with your toppings. Bake at 500 degrees for 10-15 minutes, until bubbly.

Slice and serve.

* You can use whole wheat/all purpose flour for the full 3 cups, I subbed in rice flour because of my wheat allergy*

Summer Citrus Smoothie

It’s officially Summer!!

And that means:

Yea – Smoothies. I have a smoothie pretty much every single day – and it’s usually the same one. It’s a green monster of goodness. In my usual I’ll have banana, kale, spinach, ice, coconut/almond milk, protein powder, flax seed  – blend it all up and enjoy.

I’ve never really posted a smoothie recipe on here because I just throw whatever is in the fridge into the blender usually – however, I thought I’d enter a contest by one of my favourite sites – Healthy Happy Life by Kathy Patalsky – a contest to show off your ‘Smoothietude’ for her upcoming book 365 Vegan Smoothies out in July.

I thought I’d make something new, and seeing as how it’s hosted by DOLE, I definitely had to include my favourite, the banana!

I love bananas – I eat at least one a day, maybe two! I always have ripe banana’s on hand. Sometimes if the produce market I go to doesn’t have ripe enough ones, I’ll buy a bunch of green ones from them, then go to the grocery store and buy some more ripe ones too so we have them ready to go. I can honestly say we have at least 10 bananas, if not more, on the counter at all times. Usually two large bunches. Adam loves bananas too – so they go fast between the two of us. Especially when I use them to make 1-Ingredient Banana Ice Cream, or Fudgey Banana Brownies, or Banana Brownies with Chocolate Avocado Ganache, OR Banana Oatmeal Cowboy Cookies (vegan). I always add them to my smoothies because they make them so smooth and thick – even better if you have some frozen banana slices.

Since It’s the beginning of Summer I thought I would make a citrus smoothie with banana. Anything with citrus is refreshing, and adding frozen banana makes it perfect for long hot summer days!

Citrus is also amazing for you! It’s packed with Vitamin C which helps prevent colds. And, since we’re outside all summer long soaking up Vitamin D from the sun, Citrus fruits actually help your body absorb the Vitamin D to promote strong bones, and glowing skin! And Bananas are just as amazing, they help regulate our blood sugar and help our body from becoming overly acidic. They are packed with potassium – great for having before/after a workout too!

I combined the two to make a frothy smoothie, with add-ins like flax seed and protein powder! **Recipe Below**

Summer and long sunny days make me happy – and so does this smoothie! It’s colour and ingredients are refreshing and a great pick me up on a hot summer day.

Banana Citrus Smoothie

  • 1/2 ripe Banana
  • 1/2 ripe Banana, sliced and frozen
  • 1 juicy Satsuma tangerine, peeled
  • 1/2 cup Ice Cubes
  • 1/4 – 1/2 cup Coconut/Almond milk
  • 1 Tbs. Flax Seed
  • 1 tsp hemp seeds
  • 1 scoop protein powder

Add it all to the blender and blend until frothy! Top with fresh blueberries and a slice of tangerine for garnish. Enjoy!

Happy yellow citrus smoothie = happy day! I’m always happy after I’ve had my smoothie =) They say the colour yellow is a ‘happy’ colour, and I agree! Just like the colour of bananas, and this smoothie 🙂

Nine Years

It’s been nine years today since my dad passed away.

They say it gets easier with time, but I think that’s a lie. When it first happens, you immediately try to think of all the memories you have of that person. You think of the good times, the jokes, the laughter, the family camping trips to Cultas, the huge italian dinners, Christmas, Easter. A month after he passed away I quickly tried to write every memory I had of my dad so that I wouldn’t forget them, the stories, the anecdotes, his manerisms. And then, as time passes it begins to fill up with new memories. Memories that he’s missed. Every year that passes is just another year where he wasn’t there. Another birthday, another holiday, another milestone in life that he wasn’t here to celebrate with us. It doesn’t get ‘easier with time,’ as I’ve been told.

In the last year alone I can think of a million and one things that I wished he was here for. My university graduation where my mom and brother watched me walk across the stage to receive my degree, my first trip to europe and Italy to visit his relatives and see where he was born with my nonna (his mom), buying and moving into my first house with Adam, my brother Nick completing school, running an electrical business as a journeyman, participating in sailing races, receiving my teaching certificate and becoming a teacher; something he always knew I would become and was infinitely proud of my educational achievements even at a young age. The list goes on. With every year that passes since he left us so suddenly more memories are made without him, and it won’t stop. I could flash forward 2, 5, 10 years to my wedding, first child, etc. that I know he won’t be there for, and try to brace myself for the ache in my heart when those special days approach but it won’t make up for the fact that he is no longer here. We just celebrated another father’s day without him, and even though I know the day will come every year just as it always does, it still doesn’t get any easier, in fact I think it’s harder. I’m angry he isn’t here for me, and I wish he was. If you still have your dad, give him a hug today and do something together that you will remember 9 years from now.
