This week has turned into a frenzy of to-do lists! With our housewarming on Sunday at the top of the priority list.

Yesterday was my momma’s birthday so I met her at work and took her out to lunch, then I stopped off and visited Adam at work before coming home. We also went down to the states for a quick shop, although we only ended up buying groceries and gas. It was a major bust for home decor and clothing this time. I mentioned before that It’s my Nonna’s 75th birthday Friday night, and during the afternoon friday I’m going to help out at the elementary school where I did my practicum. I also have to bake a cake and cupcakes Friday morning for the baby shower Saturday. I’m also beginning baseball tonight, and a game tomorrow, as well as a tournament all weekend which I’m most likely having to miss because of the amount of stuff going on.

Yup, this is one very busy week.

Monday I drank about 10 cups of green tea, and then was up all night. I hadn’t realized why until the next day when I remembered all the green tea. As a person who never drinks coffee (read: I hate coffee), and rarely drinks tea (on occasion) I had a large amount of caffeine on Monday that kept me up at 4 am. Adam was none too thrilled since he had to be up at 5:30 for work.

Woops.

I’m usually a water person, maybe with some lemon. I probably haven’t drank pop (american friends, thats ‘soda’) in forever, and I rarely drink juice except maybe some orange juice mixed with water. However, maybe this week I’m in need of a little caffeine to keep me going.

The to-do list thus far:

  • paint
  • organize
  • clean, clean and clean
  • bake cupcakes for baby shower
  • bake for housewarming
  • baseball x 2
  • headboard (hopefully finish re-doing it)
  • guest room
  • office
  • help at elementary school event
  • nonna’s birthday party

Yea, caffeine is needed.

I’ve made something similar to this a while ago here and here after seeing posts for protein balls, cookie dough balls etc. such as Fitnessista’s Amazeballs 

These are great to snack on before or after the gym, and with baseball starting again they’d be great to throw in your bag for some energy before the game. 

Since I have a wheat and dairy allergy I had bought some Vegan Protein that contained vegetarian proteins instead of whey.

Adam had tried it but didn’t like the taste of it mixed in his drink, but in these protein pods you can’t taste it at all. So, it’s a win-win.

I had some leftover toasted coconut from cupcakes and though they’d add some flavour without adding any sugar.

Just throw it all in a food processor and mix it up. I scooped them out with a ice-cream scoop and stored them in a container. Keep refrigerated so they hold their shape.

Protein Pods

  • 1/2 cup unsweetened coconut (toasted, or un-toasted)
  • 1 cup oats
  • 1/2 cup almond meal
  • 7-8 medjool dates, pit removed
  • 1-2 scoops protein powder of your choice

In a food processor pulse the oats and almond meal until combined, should be pretty fine powder.

Add the coconut, dates, and protein powder. You can add a dash of cinnamon for antioxidants as well.

Turn food processor on and mix until dough begins to form, it should begin to clump together slightly.

If you find it is too dry, you can add more dates, or even a tablespoon of nut butter (almond, peanut, even sunbutter)

Using an ice cream scoop, or even a tablespoon form balls or ‘pods.’ Store in an airtight contain in the fridge for up to a week.

Add ins:

  • Nut butter
  • chocolate chips
  • cinnamon
  • dried fruit
  • cashews (add with almond meal and oats)

Pulse oats and almond meal

  

Add dates, coconut and protein powder

Pulse again until dough forms.   
 
Shape into pods or balls – refrigerate.

Teacher, Teacher give me the news…

So I guess this is real life now.

A friend of mine from school was just hired THIS morning to a school district! We just finished classes on Friday! How crazy. I know I’m finished, and I have my teaching certificate but I still can’t believe that I can now apply for positions and TOC jobs. I still have to get my resume together and updated, and fill out a ton of forms and do paperwork but it’s feeling more surreal now.

I still have to take a couple courses this summer for my second degree, aBachelor of Education, but I could still be a TOC until the end of June since I’m only taking classes two days a week. Eek! No longer a student, I am now the Teacher!

Thankfully I have two weeks off before classes begin again, and there is a lot happening in those two weeks (aside from paperwork). This weekend is packed! Friday night we’re celebrating my Nonna’s 75th birthday with a great big italian dinner and dancing at a restaurant in Vancouver. Saturday I’m super excited to be making ‘Gender Reveal’ cupcakes for a baby shower, and Sunday is our House Warming with both our families. This week will be full of organizing, some painting, getting the house in tip top shape to show it off!

And on top of that, I have also decided to play baseball again this year! A friend of mine from school needed more girls for a Senior B Rep team, and asked if I wanted to join. I haven’t played in a couple years but I got pulled in! So there’s a practice and a game this week, and weekend which I might have to miss due to all our events! But I love being busy, and being home for two weeks after teaching full time in a practicum and classes would make me stir crazy.

We celebrated all day and night Friday after our last class of PDP, and then Saturday morning I woke up and had to drop off a few dozen cookies, banana bread and cupcakes to my elementary school’s bake sale to raise money for a new playground.

Caramelizing the bananas before adding them adds a rich deep flavour compared to regular banana bread. Great for school, bake sale’s or an afternoon snack.

Even better with a smear of Trader Joe’s Cocoa Almond Spread (Like Nutella, slightly healthier…sorta.)

Caramelized Banana Bread

Other Banana Bread Recipes Here and Here

  • 2-3 well ripened bananas
  • 1 1/3 cups whole wheat flour
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/3 cup butter melted
  • 1/2 cup sugar
  • 2 large eggs room temperature
  • crushed Walnuts

Preheat oven to 350°. Spray loaf pan with cooking spray.

  1. Whisk together thoroughly the flour, baking soda, and baking powder in bowl.
  2. In small pot on medium heat, add the butter, sugar and bananas. Mash with fork. Heat until sugar and banana are caramelized – about 5-8 minutes. Remove from heat and let cool.
  3. Gradually beat in eggs one at a time.
  4. Fold in the banana mixture to the flour mixture, add walnuts (optional)
  5. Spread evenly in pan. Bake until a toothpick inserted in the center comes out clean, 50-60 minutes.
  6. Let cool in the pan on a rack for 5-10 minutes before un-molding to cool completely on the rack.

Seattle Eats: Mighty-O Donuts

Continuing our Seattle Eats series from our weekend in the states a few weeks ago. Part one: Chaco Canyon Cafe

I had looked up the majority of our eats on the Seattle blog Daily Garnish.

I came across this recommendation for an Organic Vegan Donut shop just outside of Downtown Seattle called Mighty-O Donuts.

Our donuts are made locally out of our bakery in Seattle using certified organic ingredients. They contain no chemical preservatives, no hydrogenated oils (no trans fat), no coloring or artificial flavors, and no animal derived ingredients, which make them cholesterol free. We don’t compromise our ingredient standards, and strive to produce quality donuts that taste good every time

It’s a cute little bakery in an old historic building in the neighbourhood of Wallingford. I will definitely be stopping by there on every trip down to Seattle for an early morning breakfast donut.

It was hard to decide which one to choose.. they were all so good looking.

But, after a couple taste-tests from the samples on the counter we made our decisions.

We did a little taste test – I liked the coffee and grasshopper the most. French toast was also delicious!

If you’re heading down to Seattle, I highly suggest dropping by and picking up a few! If they’re organic and vegan – they must be good for your, right 😉
