Check It Out

Well this was the first ‘real’ school week. Classes have officially started, and homework is already piling up. Although, the extremely hot weather we have been having here in Vancouver would tell you otherwise! I cannot remember a September this hot ever.  In fact, it apparently broke lots of records for heat in the month of September! I guess we were due for some sun since our summer was less than stellar.

My school is atop a mountain, and therefore is quite daunting and gloomy in the winter. Some say it is depressing. And it is. How could it not be, when your stuck inside rather large (huge) concrete campus buildings, on a mountain, in the haze and fog, and, most often rain. I have to take two sky trains, and then a bus up the hill to get to school. In the winter, if it snows heavily, no one can go up or down to the campus. People have been stuck up there it was so dangerous. Last winter my friends were up there for three hours before a bus was able to go up and bring students down. It’s safe to say we get more than a few snow days each year.

So, this week it was a nice welcome back with the sun gleeming off of the sombre grey concrete buildings. Students took every advantage of being outside this week, laying on the man made grassy step pyramid in the middle of the AQ (Academic Quadrangle) and laying near the pond.

In the winter and colder months I don’t stay at the campus longer than I need to usually. I go to class, and come home most days without dawdling. This semester however I have a few breaks for one or two hours between classes, so I’m stuck. It was nice to be able to soak up the sun in between English and History classes. Also to eat some lunch. I munched this chicken wrap from Nesters grocery store for lunch, it was two of those. It was really good! But filling. I think I’ve gotten used to eating with Adam, where he finishes whatever I cannot. And usually it’s about half. He can’t get over how I don’t finish meals. I just get full so quickly that I can’t eat it all. Lucky for him 😉

This is also the first time that I’ve taken advantage of the library at my school. I did take out a book in the Summer semester, that was mandatory for an assignment, but otherwise I can honestly say in the four years of school I have not checked out library books. Crazy right?? Especially for an English Major! However, with the wonderful world of web I am able to access almost 100% of articles, books, magazines, journals etc. online through the schools library database. I’ve gotten pretty fed up with paying ridiculous amounts of money on text books that cannot be bought back, and other students don’t want them after, and I really honestly don’t use most of the time. So, I’ve learned now to request books for class through our library to check out for the entire semester instead of buying them. In English, we mostly read novels for classes and other literature so it is easy to grab one of many copies on hand. They are usually available online for free as well, but I am on the computer so much that I can’t take staring at a screen any longer, especially to read an entire novel.

Speaking of Libraries, the brand-spanking new City Centre Library opened its doors last week! It is ultra sleek and modern. Adam and I scoped it out when it had it’s soft open. Having just moved in with Adam this last year, I wasn’t a member of the library out here. So I got a new library card, and Adam found out that his existing account had an overdue amount of $5. Since 1999. 12 years! Haha good thing they don’t charge late fees! He would have been fifteen haha.

The library worker said the government never forgets. I guess not! lol. So he paid his fees, and I took out some cookbooks! I’ve never though about taking out cookbooks from the library. But, what a great thing to do! I don’t have excess amount of money to spend on a ton of new cookbooks, though I would like to. So this way, I can take out a bunch of books (up to 50! at a time!!) and peruse them to see if I like them or not. If I did really like one, I could buy it myself afterwards. Or, if nothing catches my eye then I don’t have to worry about spending the money on a book I won’t be using.

These are a few that I saw, and that I had been wanting to look at for a while. I can’t wait to return them and take out more!

Giada’s book, of course I had to get an Italian one. It has simple easy recipes with beautiful photography.

Jamie’s quick and easy to follow recipes are great. This man is awesome. The photo’s of both him and the food are eye catching. With complete meals, entree, sides and dessert for each section. No need for guess work.

I’ve been trying some new raw and vegan recipes lately, and have been waiting to look through this book for a while! It’s very in depth, with lots of directions and background information to ease you into the raw food lifestyle.

The desserts look mouthwatering!

As does the food presentation.


Of course, who hasn’t heard of the babycakes bakery in New York. I couldn’t help but check out these two books.

They also have helpful notes such as how to frost a cupcake. And they include a directory and apendix in the back as to where you can find the ingredients they actually use in the bakery themselves.

I have a thing about donuts lately!

Lainey wasn’t interested in the books. Only napping in our hot apartment.

 

She is rather cute. The new library would also a great place to study. It looks comfy, and quiet.

Long Weekend Recap

I’m not ready to go back to school. I’ve only been off for just under three weeks, between summer classes and fall semester. I can’t believe it’s already September!! Of course our hot weather is supposed to start now!? Crazy Vancouver. This past weekend Adam and I did as much as possible in about two days, Friday night, Saturday, and Monday night. Adam went to Whistler Sunday night for a stag, so we didn’t get to go away anywhere =( But we managed to get in a few things in the nice weather before I head back to classes and stress.

Here’s some photos from the long weekend:

Beautiful flowers from Adam’s sister and brother-in-law whom we had over for dinner last week, along with his parents. They are so pretty! I wish they would last forever.

These flowers actually have lasted forever (below). My mom picked them for me, almost a month ago. I’m seriously not kidding.  I’ve changed the water about three times, and trimmed the bottoms and they still live! Despite the heat and not much sunlight!! crazy! They were in the bathroom, but now sit on top of my bedroom dresser 🙂

Lainey and I scoped out the new Ikea catalogue. Adam and I had an ‘Ikea date night’ last week as well. Lainey even came along! First time we hadn’t been told no pets allowed – so she came all the way to the check out with us! (The lamp on my dresser above is a new purchase! Adam also got one, along with other impulse  much needed Ikea items!)

Friday night after Adam got home from work (early!) we headed to Granville Island. I love market places, and walking around looking at the delicious food and produce.

We stopped by an Italian deli and got some bocconcini and tomato salad, eggplant rolls and an artichoke for me, and our fav Adzuki bean salad from Fraser Valley Juice and Salad.

We also had to stop for some sweet eats. Adam got a doughnut from Lee’s Doughnuts (in the background) and I got an ‘un-chocolate’ bliss ball from Stuart’s Bakery. It was soooo good!! Same idea as my raw vegan chocolate chip cookie dough balls, but it was made with no chocolate, and tasted delicious! $1.99 per ball though, a little steep! Considering I think it cost about 1$ to make an entire batch at home haha. But I wanted to try it.

Saturday we headed downtown for some shopping (we got new dinnerware!) and walking around. We happened to stumble upon a Nabob promotion stand giving away free coffee. I don’t drink coffee, so Adam got to have two! 😉 It smelled delicious!

Later on we got a little hungry from all the shopping/walking, and decided to try our first Vancouver food cart experience! After finding La Braisserie, and seeing it was sold out for the day, we wandered around and came across ‘Bun Me’ and split a sandwich. It was really good! First food cart experience = win.

We had to save room for dinner, as we had a Groupon for the Smoking Dog Bistro.

I had the Halibut and Adam had the Steak Frites. Both were really good! Much better than our Vegas dinner out…

We walked around Kits Beach afterwards and watched the sun set.

Monday, after Adam got home we decided to go to the last night of the PNE (Pacific National Exhibition). I received a two-for-one admission ticket from the Pirate Pak Day at White Spot. It’s just not the PNE without mini doughnuts! or ‘Donuts’?

We had to walk around the petting zoo, and met the rather large oxen at the PNE this year.

There were also cute little goats! He was munching on that hay all night.

We met up with one of my cousins, Sara (below on the left), and watched as she and a few friends went on some of the new rides at the PNE. Unfortunately one of the newest ones, the Atmosfear (pictured below), broke down after they had waited almost an hour and a half in line!! They proceeded to go on some stomach-curdling rides afterwards.

Overall it was a pretty good long weekend. The weather was the best it had been in a long while, and well over due for Vancouver! I’m definitely not looking forward to going back to class.. I’ve already begun filling out a calendar of events with all my assignment due dates. There is a lot of them. On the plus side, this is my last year! I’ll finally be graduating in June. Woohoo!

Doughnuts

Vegas & Doughnuts

Adam and I spent the past weekend in Vegas for a pre-back to school vacation! It was hot. Really hot. Like 105 degrees hot!! But we weren’t complaining. We divided our time between shopping (me) and gambling (Adam). He likes to play Craps, and I like to watch. After four days of watching him play I think I finally understand most of what happens on the table, ‘pressing’ bets, the pass line, the ‘on’ numbers, and the number you don’t speak of. It was lots of fun, we love Vegas. I already want to go back!

We did end up going to Mon Ami Gabi a few times, the food was good, but really rich! And our one actual dinner (aside from pizza-for adam- and sandwiches-for me basically every.single.day lol) at Bouchon’s in the Venetian, turned out to be a real disappointment! The dishes were so salty we both took a few bites, felt sick, and stopped eating. We got half our meal comped because it was so terrible. Oh well, next time!

But, we had to return to Vancouver. Where it is now raining, and a far cry from 100 degrees. Our flight was actually delayed two hours, and we had flown out of Bellingham (for a cheap flight), so once we landed we had to drive back across the border still. We arrived home at 2 am, and poor Adam had to be up in a few hours for work! It always seems you need a vacation after your vacation 😉

On a few occasions I’ve been looking for a doughnut pan, but I haven’t had much luck in finding one, in Canada at least. We went to Fashion Show Mall to do some shopping, and of course I was more interested in the houseware stores than the clothing stores. Though I did manage to get a few deals at Dillards, where they had 50% or 30% off, with an additional 30% off of that! And I finally bought some TOMS after wanting them forever! I figure I need some ‘back to school’ clothes 😉 Even in fourth year university you should still be able to shop for back-to-school 🙂 🙂 Although, the new computer battery I’ve needed for a year has still yet to be purchased…

Back to doughnuts. So I finally found one, at Sur La Table one of my favourite stores! We packed it in our suitcase for the ride home 🙂 I’ve been wanting to try out baked doughnuts, a healthy-ish version of the fried ones. They would be really cute at a birthday, holiday etc. because like cupcakes you can decorate them to match any scene and try a variety of flavours.

One of my all-time favs is Mint Chocolate Chip 🙂 I managed to find some yummy ice cream (even though I shouldn’t eat it! due to dairy allergy) in the Paris (where we stayed) in Vegas. It was 100+ degrees, I needed something to cool off!

These doughnuts are denser of course, but just as delicious! I topped them with mint flavoured icing and sprinkled it with mini-chocolate chips. Yum!

The pan is from Wilton, it was 10$. Good purchase I think! I see lots of events with doughnuts in the future 🙂

Mint Chocolate Chip Doughnuts
Basic Baked Doughnut Recipe
from Wilton 
makes 12 regular-sized donuts
  • 2 cups flour, sifted
  • 3/4 cup granulated sugar ( I used raw organic )
  • 2 tsp baking powder
  • 1/4 tsp ground nutmeg
  • 3/4 cup buttermilk (I used almond milk)
  • 2 eggs, lightly beaten
  • 2 Tbsp butter, melted
  • 1/2-1 cup icing sugar
  • peppermint extract
  • 1-2 tbs. milk or cold water
  • mini chocolate chips
Preparation:1.  Preheat oven to 425°F.  Spray the 6-cavity donut pan with nonstick cooking spray.

2.  Sift together cake flour, sugar, baking powder, nutmeg in a large mixing bowl.  Whisk in buttermilk, eggs, and butter and beat until just combined.  Fill each donut cup until about 2/3 full. I used a piping bag to evenly fill/distribute the batter.

3.  Bake 7-9 minutes, or until the top of the donuts spring back when touched.  Cool in pan for about 4-5 minutes before removing from pan.

Best served fresh on the same day.

To Make the Mint Icing:
 
In a bowl large enough to ‘dunk’ the doughnuts, mix together about 1 cup of icing sugar, and tablespoon or two (depending on consistency) of milk or cold water, whisking until smooth. I added a few drops of Peppermint extract and green food colouring. Dip the doughnuts by hand into the icing, and allow excess to fall off.
 
Place on wire rack, I suggest placing parchment paper, wax or saran/aluminum underneath to catch the drippings. You will want to sprinkle on the mini-chocolate chips before it sets up completely so they will stick to the icing!
